Weddings and Reminiscing

Hello guys, hope you are enjoying your Sunday! I’ve had a really lovely weekend and today is our 4 year wedding anniversary! We aren’t doing anything special as we’ve enjoyed enough celebrations these last couple of weeks! We have been reminiscing though, especially as we attended the wedding party for my cousin Louise and her husband Nathan after they got married in Santorini a couple of weeks ago. We got married in Sorrento in Italy – it was fabulous! I have posted pictures of our wedding on the blog before if you want to take a peek! The party last night was lovely:

I wore my vintage floral dress with my nude skyscraper heels and minimal accessories – just a black leather look clutch and cuff for a bit more of an edge. The meal was yummy – moussaka, rice and salad with olives and a little mini Eton mess for dessert. 

Yesterday morning I popped into town for a little bit of shopping with some birthday money and vouchers. I had planned on only being out a couple of hours so just had a light breakfast of melon, peach and a coconut milk blended iced coffee:

5 hours later I came home with a few goodies:

Needless to say I inhaled my ‘brunch’ which I had been planning as pancakes but decided to have the quicker option of a two egg omelette filled with almond butter and sugar free strawberry jam plus some blackberries and blueberries on the side:

I also had a green smoothie to follow, and later on a huge fresh juice:

Carrot, cucumber, celery and ginger. It was lovely but much sweeter than I usually have my juices due to the carrots so I only managed half!

This morning I had a lovely breakfast before I went to the gym:

Baked sweet potato with peanut butter and strawberries, it was utterly delicious and great fuel for my Kettlecise class – I decided to use a bigger kettle bell for some of the moves and boy could I feel it!

Yesterday I cooked up a huge pot of chickpeas so I’ve been eating loads of them in with salads and I have a tasty recipe planned for tonight, however I couldn’t not make some hummus with them of course! I used my Vitamix to make it rather than the food processor and it gave it a fab smooth texture. I had some on top of a salad with beetroot and avocado:

So I think we are going to chill out for the rest of the day. As I was saying I’m planning a nice meal for dinner later and we are going to cuddle up and watch a movie together :-)

WIAW: Work that doesn’t feel like work

Hello everyone and happy Wednesday, half way through the week already can’t be bad! Today of course is another WIAW edition – a day of my eats and a bit of general chit chat. If this is your kind of thing check out the link below for lots of other bloggers posting their daily eats. I know that there is a monthly theme, but to be honest haven’t really considered them before so I’ve decided I’m just going old school from now on ;-)

Peas and Crayons

This is how I spent my day on Monday, which was a wonderful day indeed! I’d booked the day off work just so I could have time to get caught up with a few things and focus on some of my business development stuff. I started the day with the usual warm water and lemon juice followed by a glass of water with raw apple cider vinegar and then hit the gym:

I did workout 1 with a 5 minute cross trainer warm up and followed with 10 minutes of HIIT on the bike. I decided that since I was out I’d might as well swing by the supermarket for a few groceries:

I’d made a pot of coffee before leaving for the gym so just poured it straight over some ice with vanilla stevia and almond milk to slam while I had a quick shower:

Then it was time for breakfast! I made a fabulous omelette with 2 farm eggs and filled it with peanut butter and naturally sweetened strawberry jam:

I also made a huge smoothie with mixed frozen berries, a scoop of vanilla sun warrior protein powder, some maca, omega oil, water and ice. It made about 3 big cups worth, so delicious!

I decided that since I really need to be able to focus at home now and in the future I’d set myself up a desk space rather than just sitting on the sofa with the computer on my knee. I pushed our little dining table (which is actually a cheap table and fold away chairs meant for outdoor use) against the window and made myself a mini office:

I really love it! It helps me go in to ‘work mode’ much more easily when I have a dedicated space. It also means I have a nice little spot for my tea pot, I brewed up several pots of ginger green tea throughout the day.

The morning was spent mind mapping like a pro and then I took a break for lunch:

I had a big salad with romaine lettuce, cucumber, red pepper, red onion, black beans and avocado. After that I got back to it until I started feeling a bit hungry again and went and made another mega smoothie:

One of the best things about being home has to be having access to the Vita mix! I blended some spinach, red oak lettuce, frozen cherries, a cooked beetroot, scoop of chocolate sun warrior protein powder, some cococardio, water, ice and a little stevia to make an epic chocolate cherry beet green smoothie. That made a full blenders worth and I enjoyed it all :-)

After that I had the best Skype date with a new friend Nathalie from my IIN course. I hope she doesn’t mind me gushing here, but she is wonderful! We’ve been having a weekly Skype date for a little while now and we never cease to inspire and motivate one another!

Dinner was a mega quick and easy combo of a pre baked sweet potato just warmed back up in the oven with some perfect tofu I’d cooked at the weekend and some steamed broccoli:

For dessert I had some Amaretto Stone Fruit Crumble with coconut cream:

The recipe is coming up tomorrow but all I will say is that this is just incredible! Its vegan, gluten free and free from refined sugar. Best thing I’ve made in a long time, I had to stop myself going back for seconds!

I finished the day with a big mug of Sweet Coconut Thai Chai Tea:

Great end to a fab day!

I went to bed feeling motivated and happy – I guess doing work that you love and enjoy is the key to making ‘work’ not feel like work. I could have happily kept on going all day long :-)

I tend to enjoy work where I can be creative, where I am challenged and that is different from day to day. I love knowing that I’m putting something of myself out there and making a difference in the world and to other people. I guess that’s why I enjoy blogging so much, it never feels like a chore!

What kind of work makes you feel fulfilled?

Sunday Lunch

Hi folks, hope you are having a lovely Sunday. I’ve been enjoying a quiet weekend at home staying wrapped up warm from the cold!

Apart from making a big pan of soup, drinking coffee and pots of green tea and chucking more rubbish ready for project decorate I’ve done bugger all ;-) But saying that, I did go to the gym this morning – and it was a tough one! They have started a new spinning class right before kettlecise and this morning I thought I’d give it a try for a double whammy workout. It was great, I haven’t done spinning in ages and it was fun to change it up!

Before going to the gym this morning I had a fresh cucumber, celery, ginger and lemon juice followed by a coconut oil blended coffee:

I’m still doing the juices on a weekend but just the one juice on a Sunday. Now that the weather is colder I’m not feeling as attracted to juices for obvious reasons but a quick glass on Sunday morning – usually after I’ve indulged a little on the Saturday night – goes down a treat.

For a proper breakfast post workout I made a big smoothie with beet greens (roasting the beets in the oven now!) roast squash, vanilla sun warrior, ice, cinnamon and unsweetened almond milk poured it into a bowl and topped with peanut sauce and a few roast soy beans for crunch:

I also had another coffee, its one of those days!

For breakfast yesterday I made an omelette with 2 eggs filled with peanut butter and strawberry jam:

This was just cos lettuce, vanilla sun warrior and almond milk blended up.

For lunch I had some Rude Health corn thins topped with local honey comb, avocado, bee pollen and sea salt:

Absolutely delicious! I also got my russet apple fix :-)

Snacks wise I made a yoghurt bowl with roast squash, full fat Greek yoghurt and peanut sauce:

Then for dinner I made some perfect tofu with steamed kale from the farmers market and swede chips and ketchup:

Oh my god I just love swede chips, seriously I would pick these over regular chips any day! I just slice up the swede into chips, coat in a little oil and salt and roast at 200 for about 30 – 40 minutes until browned but tender. Perfect dipped in ketchup!

I also had some of my favourite raw mint chocolate:

Followed by copious amounts of popcorn and Justin’s Chocolate Hazelnut butter eaten while watching Sex and the City on Film Four. Good stuff!

These last couple of weeks I’ve really enjoyed making a big Sunday lunch. Now that I’m eating meat again I tend to make something on a Sunday then eat leftovers on Monday and eat vegetarian for the rest of the week. Last week I roasted a chicken, the week before that I made an Italian style beef mince sauce with spaghetti squash and today I made a cottage pie:

I made a big one for James and two little ones for me so I can have one tomorrow. I fried up some onions, mushrooms and grated carrot with organic beef mince, some beef stock and tomato passata then topped my pies with cauliflower mash and James with ‘lazy’ mash – i.e two small potatoes microwaved and then blended into a creamy mash in the Vitamix with butter and milk and then some grated cheese on top. Served with some steamed broccoli it was comfort food at its finest :-)
