Something to celebrate
This morning I was up bright and early for a quick yoga session. I spent 15 minutes moving through a few poses – I just did what I felt I needed so a few sun salutes, bound side angle pose and pigeon pose on each side (I love this stretch!) and then a few minutes in child’s pose which is my favourite. I really enjoy not following a set yoga flow sometimes :-)
Breakfast was another full to the top bowl of deliciousness:
Dorset Cereal Low Fat Flakes with a punnet of blueberries, pecans and rice milk. The blueberries were a special variety on sale in Tesco’s and they were the fattest and tastiest blueberries ever! I also loved adding the pecans to this, the cereal as it is never fills me up (even a huge bowl like this) so adding the pecans gives it more staying power as well as healthy fats and tasting great!
Mid morning I snacked on half a melon:
Lunch was an amazing salad featuring my seitan!
Adding the thyme and sage to this recipe was genius as it just tastes fantastic. The seitan was the perfect texture – even after being kept in the fridge wrapped in foil for a couple of days. My salad also included romaine, carrot, half a red onion, yellow pepper, beetroot and braggs liquid aminos.
Mid afternoon snackies was a cocoa orange nakd bar:
Then it was gym time! I did 30 minutes of upper body weights using dumbbells plus a few reps on the machines followed by 30 minutes of intervals on the step machine, bike and rowing machine for a total 1 hour workout.
For dinner I made a Buddha bowl with steamed greens, chopped baked sweet potato, black eye beans, raw courgette, red onion and some cheesy tofu sauce:
I like to include some raw veggies in with the cooked ones as it is a good way of ensuring that you are getting some live enzymes to help digest your food. Can you tell I’ve been doing my nutrition reading? ;-) I am also still loving the cheesy tofu sauce, I can see it being a real staple in my diet as it will go well with so many meals.
Dessert was protein ice cream made with the last of my cookies and cream spiru-tein (about 1.5 scoops), 1/4 pack of silken tofu blended, ice, water and xanthan and guar gums topped with fresh strawberries and the crumbs from my granola jar:
This was wonderful!
Tomorrow we are heading to my parents for a BBQ and to watch the Royal Wedding. I’m not hugely bothered but it is nice for the country to come together to celebrate something and of course the extra day off always goes down well! I’m just about to make a tasty salad to take along with my tofu sausages!
I am also extremely happy that we have an early end to our week as I am now on holiday for almost two weeks, and in one week we will be off to NYC! That’s what I’ll be celebrating most of all tomorrow!
