PB&Co Love
Thanks for all your great comments to yesterday’s Monday Musings post on how I started running, if your a new runner and looking for some tips check it out, especially the comments section!
Yesterday morning I was straight at the gym for a mega workout. I was expecting to feel a bit done in after running my half marathon on Sunday, but I woke up feeling energised so did my usual tough workout including 20 minutes of speed work on the treadmill, 40 minutes of intervals on the cardio equipment and my abs and core exercises.
Today I got in some yoga first thing with a Yoga for Runners podcast and then I was back at the gym this evening for Body Pump! We did the new release which I really enjoyed although I didn’t find it as tough as the last one, I think I need to rethink my weights for some of the tracks.
Tasty eats have included this packed out bowl of Alara In the Garden Goji muesli with brown rice puffs, blueberries and hemp milk:
I haven’t had a giant bowl of muesli for so long. This was good, but I’m not a huge fan of this brand of muesli. I’m making myself eat it before I buy another box though!
Today I had a big bowl of Kashi crunch cereal with strawberries, hemp milk and a chopped dark chocolate calcium adora disc:
I love the spoonful's with the little pieces of chocolate in them!
Lunches have been the usual tofu topped salad beasts with clemintines:
This included various lettuces, carrot, red and yellow pepper, red onion, cucumber and smoked tofu. I definitely prefer this Taifun brand smoked tofu to the Clearspot brand!
I treated myself to a lovely snack today at work:
2 plain rice cakes topped with PB&Co Dark Chocolate Dreams from a snack pack, just what I needed for a mid afternoon pick me up!
For dinner I made a simple but delicious Lentil and Bulgar Pilaf type dish served up Buddha bowl style:
This contained garlic, onion, sugar snap peas, green lentils, bulgar cooked in veg stock, spinach, fresh parsley, shoyu and mixed seeds all on top of some steamed kale and broccoli. It was very tasty, and so green! I think bulgar only comes second to couscous in the quick and easy stakes, I just covered it with hot water, added some vegetable bouillon and it was done in 10 minutes!
Desserts have included chopped apples with PB&Co White Chocolate Wonderful for dipping:
I’ve certainly been enjoying the PB&Co these last couple of days!
This evening I fancied something slightly different to the usual protein ice cream made with a powder so I made chocolate berry ice cream using a small carton of chocolate soy milk, frozen raspberries, ice, xanthan and guar gums:
I topped it with some freeze dried berries. Still a good hit of protein from the soy milk but a nice change to the usual protein powders!
I’ve really been loving nut butters for making sure I’m getting plenty of calories in while I’m training for the Great North Run. I love the PB&Co varieties I picked up in NYC but I also love almond butter, cashew butter and sunflower seed butter!
What’s your favourite nut butter? I love making my nut butters go a little further and have a more ‘drippy’ texture by combining them with a little hot water, yum! What’s your favourite way to eat nut butter? In, and on top of smoothies, porridge and with an apple for dipping are my faves!
