A busy day, and perfect Tofu!

Hi Everyone, hope your weekend has been so far so good! I've had a lovely day which started off with a brilliant run! When I woke up the sun was shining and I was just itching to get outside. Before I set off I had a cup of green tea and a few dates and brazil nuts to give me a little energy.


I did the same route as last time but tagged a little bit on to the end to make it a tiny bit longer. I did 3.17 miles in 31:38 and managed to increase my average mil/min by over 30 seconds from last week. My splits were:

Mile 1 10:24
Mile 2 9:50
Mile 3 9:36
Mile 4 10:38

I was buzzing afterwards! After I'd cooled down a bit and stretched I made a lovely breakfast, chocolate porridge with walnuts and chocolate sauce. I made up some porridge with water, added some vanilla rice milk, chocolate whey and some chopped walnuts. Then I topped it all with some more chopped walnuts and some chocolate sauce left over from last nights banana softserve (cocoa powder mixed with agave).


I pottered around getting ready then headed out to do all my weekend visits. I packed myself a little lunch as I knew I would be out and about all over the place. I made a cheese sandwich with some edam cheese and a wholemeal granary bun, some carrots and an apple.


I called in at my Mam and Dads (had my lunch there), my friend Kates (cuppa and a hob nob) and then my friend Charlies (green tea and walk round the park) before heading into Newcastle. I was going into town with the idea that I would be avoiding all the usual high street shops and having a look around the many little shops / market. However, the wind had really got up by then and I was freezing! I managed to have a look in a fitness shop and bought myself a top and running leggings for a respectable £20.

Not the best pic, but you can see the nice pink accent colour! While I was there I had a look at the trainers but it was too busy and I couldn't be arsed to wait around to try them on. I think I'll head back there next week. After that I popped to my little independent health food shop and stocked up on almond and cashew butter. After I'd been there I just wanted to get indoors so I bought a couple of magazines to feed my addiction (Grazia and Living Etc, my favourite interior design mag, I love to look at the beautiful houses and dream I'll have one some day!) then I hit Costas for a skinny caramel latte.


I hung about until J finished work then we came home and I got on with making my Tofu! I was inspired by Averies post on Sesame Ginger Maple Tofu so I defrosted some tofu and got as much moisture out of it as possible then marinated it in sesame oil, fresh ginger, soy sauce, maple syrup and agave (I did that this morning so the flavours had plenty time to sink in). Before I popped it in the oven I added some ground black pepper and more maple syrup and agave. I served it with some roast brussel sprouts, brocolli, red pepper and red onion. It was really gorgeous, its the first time I've managed to make tofu really tasty and crispy so a huge thank you to the wonderful Averie!

I'm now planning on chilling out catching up on blogs and watching TV while drinking some 'mocktails' inspired by Thirtyandhealthy made from Pom Juice and sparkling water with a little bit of Green and Blacks 70% Chocolate, my fave! I'm just thinking of all those antioxidants ;-) I have the evening to myself as J has his friends round, total bliss!
